    Alfredo is a Huatulco Native with true passion for cooking and the traditional Mexican gastronomy, raised in a matriarchal home, he had to start cooking at a early age, inheriting  ancient knowledge and the recipes he shares in his classes.

    You don't have to be a chef or an exeriences cook to come and join the fun, don't let your cooking confidence stop from joining this culinary adventure, where food is prepared while we sip our coronas and Margaritas made from scratch.

    The Classes


    MONDAY- MI COCINA

    In this class we take the approach of “what’s cooking in the kitchens of Mexico” We’ll prepare delicious dishes based on the “three sisters” and Huitlacoche, which was once a royal food, as we create a feast of classic Mexican favorites that are always present in any respectful cocina. These include refried beans, red and green salsas, guacamole, hand-made tortillas, quesadillas with epazote, sopes, and empanadas.

    TUESDAY-SPICY PASSION

    One of the most festive dishes in Mexican cuisine is the star of this class. You’ll learn the techniques necessary to create perfect Chiles Rellenos. To complement this festive dish, we’ll make Chicken Tinga and Beef Picadillo, stuffed roasted poblanos & jalapeños.

    WEDNESDAY- COSTA (SEAFOOD)

    Oaxaca’s coastline provides amazing seafood. We’ll create a ceviche with freshly caught fish, and a shrimp stuffed avocado which could be your next starter back home. The main dish on this menu will be the grilled catch-of-the-day with a guajillo pepper sauce as a perfect marinade for the Pescado a la Talla,

    THURSDAY- HOLY MOLE!!

    That’s the expression that will come out of your mouth when we finish the most complex dish in Cocina Oaxaqueña, “El Mole Negro” or Black Mole. Close to thirty ingredients are cut, roasted, fried, boiled, blanched, peeled, deveined, mashed, and ground to create the most embraced Mexican sauce. We’ll also make the more everyday yellow mole which is not as complex.

    FRIDAY-TAMALES

    Both happy and sad celebrations used to call for important dishes such as Tamales. We’ll assemble and create the best Verde de Puerco and Yellow Mole with Chicken made from scratch to stuff out tamales wrapped in corn husks and banana leaves.

    SATURDAY-TACOS & MARGARITAS

    Mmmm, tacos, there’s nothing more Mexican than tacos and Margaritas, in this class we’ll create a selection of tacos for any taste and palate, with options from chicken, carne asada, fish, and shrimp with homemade corn tortillas, to complement we’ll prepare delicious margaritas from scratch, in this class we’ll get you ready for you to host an authentic Mexican fiesta!

    MOM'S FAVORITE

    Oaxaca is the land of the seven moles, in this class we’ll create the Chichilo that goes perfectly with game meats, and the tasty Green Mole with Pork, and Beans Soup with Epazote complement these two gluten-free moles.

    FUSION

    This class was created upon frequent request to learn the recipe of the famous Shrimp Stuffed Pineapple found in beach restaurants in Huatulco; the best-selling starter at Alfredo’s, the Jalapeño Poppers, and the sexy Passion Fruit Ceviche.

    EVENING TACOS & MEZCAL TOUR

    On this tour of downtown Crucecita will go to “my guy” to taste some amazing artisanal mezcal, you’ll learn how to drink it, the process of production, the history and the benefits of this ancestral spirit, and snacks will be provided; then we’ll walk to a cantina to have a real bar Mexican experience, have refreshments and try the botana we’ll be served, the next stop will be at a street taqueria to sample traditional night tacos, our last stop will be alfredo’s for a nightcap or hit the dance floor if there’s a band playing.

    MONDAY'S POCHUTLA MARKET & CULINARY TOUR

    Departure is at 9:00 am, we’ll walk downtown La Crucecita to check out fresh produce from street vendors, fish shops, and butchers, then we’ll stop at an eatery for breakfast where local authentic food is cooked over wood, tortillas are freshly made and if you want to give a try of making one is cool, we can also help make a salsa there; then we’ll go off to Pochutla (about 50 minutes) to visit the market, here we walk the adjacent streets to the Mercado where vendors from all over the small villages come to sell their products, we can also sample some food here and buy some very cool and useful handcrafted cooking utensils.

    Then we’ll drive back to Santa Maria to visit the mezcal factory to learn and hopefully experience the process of making this amazing spirit; on our last stop, we’ll have a late lunch at a place chosen depending on timing. We should be back by 3:00 pm.

    Amazing Mole Experience

    Amazing learning experience!Jun 2021We really enjoyed our day of cooking with Alfredo, one of the best days of our holidays! We started by collecting all the amazing local ingredients to make ceviche, tortillas, salsa, guacamole and more. We learned so much of the history of the town as well as the Mexican cuisine. Cooking in the characteristic open-air kitchen was just beautiful. Alfredo was an excellent, patient teacher, from fileting fish to baking the tortillas we felt like gaining such an insight to the local cuisine and the family recipes. He and his family were very warm and welcoming. We would definitely recommend this wonderful experience to everyone travelling in Huatulco!

    Amazing Experience

    What a great experience! My wife is a trained chef from Japan and really wanted to learn how to make authentic Mexican food. Alfredo is the man for that. He had someone pick us up from our hotel and we met him at the market. We got all the cooking supplies to make tamales, moles, tortillas, salsas, and everything else for a great meal. Oh yes everything for amazing margaritas too ha ha ha! Once we arrived at his kitchen we prepped and made all the food with Alfredo. He walked us through his family recipes and we all learned a lot. Of course eating time was the highlight. Alfredo and his family are amazing people and this is an experience I highly recommend for those that want to learn how to cook authentic Mexican food or just want to eat amazing food! When we come back we will definitely do another class.
